Medium dark red with purple tint. Open lifted floral nose with mix of violets, plum and charry mineral complexity. The palate is tight with fine youthful tannins. Gentle and polished, it opens up beautifully on the palate, with a deliciously lustrous finish.

Medium dark red hue, lifted bright nose, dried plum and dense ripe cherry notes. Palate is polished with elegant tannins, good fruit sweetness and appropriate savoury mushroom development. Finishes with flick of sweet herbs and spice. Drinking nicely.

Made onsite from locally sourced Chardonnay grapes. Tropical fruit notes supported by a hint of hazelnut and spice. Expressive palate showing char, spice and dried fruits. Lovely density and weight mid palate with a fresh dry finish.
Dublin St Pinot Noir Rosé 2023
New release dry 100% Pinot Noir Rosé.
This dry Pinot Noir Rosé has a delicate hue of rose gold. The aromatics are a complex mix of rose petals, sandalwood spice and orange zest. The palate has a pleasing depth and density, with a beautiful flow and elegance, finishing with a fresh citrus acid burst.
Dublin St Noble Riesling 375ml
Made onsite from locally sourced riesling grapes. Dessert wine that is medium dark gold leaf in colour. Attractive and lifted aromas of baked apricot, lime zest, oranges and a suggestion of caramelised sugar. On the palate the wine is medium sweet, has medium/full bodied texture and is well balanced by a bright fresh acid line. The overall impression is of a wine that has gently aged yet remains fresh and fine.
Late harvest botrytised bunches of Martinborough riesling slowly basket pressed, cooled and fermented with selected yeasts. 150g/l of residual sugar and acids at 6.1g/l provides a balanced Noble Riesling.
